What about like an airport race using prop poered aircraft and we race from airport to airport land taxi gate taxi takeoff and things so we know no ones cheating and we time it and hand out points for 1st 2nd and 3rd place winners that finish the course
something like STN - EMA - MAN - LPL - IOM - DUB - LBA - ABI - EDI - NCL - STN for example as a race

We could go around to those airports in advance and park certain planes in certain parking spots, each waypoint (airport) could have instructions to the racer, IE - Land runway 24, taxi to General Aviation Parking 15, note down aircraft that's parked in that space, taxi to runway 09 for takeoff. That way, we would definitely know no ones cheating, as they'd have to land to see the aircraft, but also we're telling them which runway should be used for what, so we don't have someone trying to race to land on 24 and another trying to race to take off on 24.

As far as I know it's not possible for us to setup custom markers in game, like the race missions have. But, we could issue everyone with a flight plan we've setup, so everyone has the same flight plan, then instruct each contestant to submit their flight data to us after the race, so we can confirm they flew each leg of the race.
Might also be worth setting up a base time, so one of us flies the route at a steady pace, so we can compare flight times against that.

Not if you enjoy flying anyway, the base time would be fun to setup (for me anyways), the setting planes at each location would be hardest part, as I think a client would have to be active at each airport with a plane parked.
Suppose we could do something where we have them park in a parking spot, take a screenshot, then have to submit those with their flight data.
